One year, so many recipes… and now I’ve put all my favourites in one place! Working with Moondarra Cheese and Tarago Cheese over the past year has given me plenty of reasons to get creative in the kitchen. And while I will always love a beautiful cheese board, I’ve discovered just how wonderfully versatile these cheeses can be. From a relaxed lunch to a dinner party, a picnic, a special celebration or those moments when you want to make something delicious without too much fuss, there are so many ways to enjoy them. I’ve had so much fun creating recipes and entertaining ideas along the way. There’s my colourful Marinated Cheese Greek Salad, packed with tomatoes, herbs and olives, and my easy Summertime Chicken Salad, where marinated cheese, peach, prosciutto and pistachios come together beautifully.
Then there are the more playful ideas, like turning Moondarra Cranberry & Vanilla Cream Cheese into a football for footy finals, or creating a beautiful heart-shaped Tarago Shadows of White for Valentine’s Day. I love a little fun when it comes to entertaining! And for something wonderfully simple, there’s my Baked Shadows of White with Honey & Walnuts. Pop it in the oven, add a little honey and crunch, surround it with crackers and let everyone dig in. It’s the sort of entertaining I love, impressive enough to feel special, but incredibly easy to put together. Of course, I couldn’t leave out my collection of beautiful sandwiches. From Honey & Pistachio with strawberries on brioche to a Marinated Triple Cream and grilled vegetable ciabatta, and a delicious Shadows of White toastie, these are proof that entertaining doesn’t always need to be complicated.
