Three Fresh Cocktails For You This Summer

Is there anything better than sitting in the sunshine with a deliciously fresh cocktail?

I don’t think so! Summer days call for creative thirst quenchers, and I am so excited that with my Harris Scarfe Collection Chyka Home, I have three new vessels to share with you. All classic enough to match back with your existing glass collection and in styles you’ll fall in love with. Whether it be a premixed special in your favourite glass, a mocktail with all the trimmings or a classic you can never say no to, you’ll find three of my new favourites below, all looking gorgeous in their Chyka Home vessels.

Blood Orange and Thyme Spritzers

Lighter in calories, but not in flavour. Get all of the unique flavours of peach, blood orange, and thyme in this tasty lighter cocktail. This recipe serves 1 and is so refreshing on a hot day, with or without alcohol.

Ingredients

  • 1 Blood orange, wedge

  • 60ml Blood orange soda

  • 10 sprig(s) Thyme, fresh

  • 90ml Club soda

Optional

  • 75ml Peach or Orange Blossom Liqueur

  • A garnish of dried citrus

Lemonade Gin Mojito Cocktail

A twist on the classic mint mojito, this tipple also uses one of my favourite liquors - GIN! By making your own homemade lemonade you will create a yummy fresh cocktail that is deliciously refreshing. You can find my Lemonade recipe in my book Chyka Home.

Ingredients

  • 8 mint leaves

  • 4 slices lemon

  • 2 cups crushed ice

  • 90ml ounces gin

  • 1 cup lemonade

  • 1/2 cup club soda

Method

  1. Add 4 mint leaves to a tall glass and top with two lemon slices. Muddle the mint and lemon to release the juice and oils. Repeat with remaining mint and lemon.

  2. Divide the ice between the two glasses. Top the ice with 90ml ounces gin, 1/2 cup lemonade and 1/4 cup club soda. Repeat with the remaining gin, lemonade and club soda. Stir to combine.

  3. Garnish with fresh mint, if desired and serve immediately.

Pineapple Ginger Beer Mocktail

Looking for a sweet, alcohol-free mocktail to end your day? Look no further! This refreshing Pineapple Ginger Beer Mocktail is the perfect mix of ginger beer, pineapple juice, and cinnamon simple syrup and looks so fabulous in my acrylic pineapple cup!

Ingredients - Cinnamon Simple Syrup

  • 1 cup sugar

  • 1 cup water

  • 4 large cinnamon sticks

Ginger Beer Pineapple Mocktail

  • ¼ cup loosely packed mint leaves

  • 1 teaspoon finely chopped fresh ginger

  • 20ml lime juice

  • 45ml ounce cinnamon simple syrup

  • 90ml pineapple juice

  • 150ml ginger beer

Method: Cinnamon Simple Syrup

  1. Combine all ingredients in a small saucepan.

  2. Cook over medium-high heat, stirring occasionally until the sugar has dissolved, about 5 minutes.

  3. Remove from heat and allow the cinnamon sticks to steep in the sugar water for 30 minutes.

  4. Remove and discard the cinnamon sticks and allow them to cool completely before using. Store covered in the refrigerator until ready to use.

Ginger Beer Pineapple Mocktail

  1. Muddle ginger, mint and lime juice in a cocktail shaker.

  2. Add pineapple and cinnamon simple syrup.

  3. Shake with ice until cold, about 30 seconds.

  4. Double strain, by pouring the mocktail through the shaker and then through a fine-mesh strainer directly into two glasses filled with ice.

  5. Top with ginger beer, stir to combine. If needed top with more ice and serve!
