Bruce’s Breakfast Salmon

Simple, easy, and oh-so-good for you, Bruce’s Mother’s Day breakfast is one to die for! Simple ingredients are pulled together quickly for this delicious savoury breakfast - or maybe you would prefer it as a light dinner or lunch. Up to you!


METHOD:

Take a large stainless steel mixing bowl and chop very finely together the following ;

  • One bunch of broccolini ( stalks and all)

  • One handful of green beans

  • One handful of snow peas 

  • One handful of continental parsley 

Add the following for flavour and mix all together;

  • Zest one lemon and squeeze in the juice 

  • Good amount of salt and pepper ( don't be mean)

  • Some dried chilli 🌶️ flakes - if spice is your thing 

  • A blob of virgin olive oil 


PLATE IT UP!

  1. Spoon the "salad " mix into two or three serving bowls.

  2. Add a quarter of an avocado sliced to the top of the salad, and add some crushed smoked almonds and breadcrumbs. 

  3. Meantime, while back at the ranch, grill some salmon fillets in the pan. Once cooked, drop one on each salad and eat and enjoy!!
