What Perfect Timing!

Mother’s Day is under a week away, and I am excited to say that my bright and sunny mustard gingham tablecloths have arrived at Harris Scarfe just in time! Homemade Lemon Butter

There is nothing better than homemade lemon butter; its flavour is the perfect balance of sweet and tart. This recipe is super simple and you can use it in so many simple ways - piped into mini tartlets or spread on cakes or hot crumpets, to name a few! But my favourite way is to spread them all over a premade meringue for a delicious crispy dessert that comes together in minutes and looks divine.

Ingredients

  • 125g (4 1/2 oz) unsalted butter, chopped

  • 230g (8oz/1 cup) caster sugar (superfine)

  • 4 eggs, lightly beaten

  • finely grated zest, and juice of 2 lemons

Method

  1. Combine the butter and sugar in a microwave-safe bowl and microwave on high for 2 minutes. Stir well.

  2. In a separate bowl, whisk the eggs with the lemon zest and juice until combined.

  3. Quickly whisk the egg mixture into the hot butter and sugar until combined.

  4. Microwave on high for 4 minutes until thick, whisking well every 1 minute.

  5. Cool, then pour into a sterilised glass jar or an airtight container and refrigerate for up to 2 weeks.

Keeping it classic and simple, I have styled the table with my white ceramic Sunday dinner set, Heidy cutlery set and a basic tumbler from Harris Scarfe. Now you know I cant do a table without an array of flowers and this table is absolutely no exception! A beautiful white and yellow collection of cottage style blooms including combinations of white dahlia, white delphinium, and Queen Anne lace acted as the perfect centrepiece, adding height and texture to the setting.
